SPINACH SAUTE 
1 bunch spinach
4 tbsp. olive oil
1/2 tbsp. red pepper flake
2 cloves garlic sliced thin

Thoroughly wash spinach, do not dry. Pour oil into frying pan that can be covered when oil is hot. Add garlic and cook briefly. (Do not let garlic burn). Add spinach to pan. Add red pepper flakes. Cover and cook spinach until wilted. Remove cover and stir spinach to coat with oil, garlic an pepper flakes. Cook briefly while stirring. Remove pan from stove. Transfer to serving dish and serve. Serves 4.

Broccoli can be substituted.
