POTATO SKINS 
Betty Crocker Potato Buds mashed potatoes, enough for 4 servings
2 tbsp. all-purpose flour
1-1 1/2 c. shredded Cheddar cheese (4-6 oz.)
8 slices bacon, crisply cooked & crumbled
Dairy sour cream, if desired

Heat oven to 425 degrees. Lightly grease cookie sheet. Prepare potatoes as directed on package for 4 servings, except decrease water to 1 cup. Stir in flour. Refrigerate until cool enough to handle about 10 minutes. Divide dough into 16 equal parts. Shape each part into ball. Flatten balls to 1/4 inch thickness into oval shapes on cookie sheet, prick each several times with fork. Bake until edges and bottoms are dark brown, 20-25 minutes. Sprinkle cheese and bacon over tops. Bake until cheese is melted, 1-2 minutes longer. Serve with sour cream. 16 appetizers.
