RICE CASSEROLE 
2 cans beef broth
1/2 c. chopped onions
1 c. plus 2 tbsp. of rice
1/2 c. butter
1 (4 oz.) can chopped mushrooms

Cook onions in butter until clear; put in casserole, add all ingredients and stir thoroughly. Cook in oven at 300 degrees for one hour stirring occasionally.

Provides 4-6 servings.
