CHICKEN CAJUN STYLE 
2 cloves garlic, minced
1 sm. onion, minced
2 tbsp. lime juice
1/4 c. oil
2 tsp. paprika
1/4 tsp. cayenne pepper
1 tsp. thyme
1 1/2 tsp. oregano
Salt and pepper to taste
6 boneless chicken breast halves, cut into 2 inch pieces
2 limes, peeled and sliced
1 lg. onion, cut into squares
14 med. mushrooms
14 cherry tomatoes

Mix together garlic, onion, lime juice, oil, paprika, cayenne pepper, thyme, oregano, salt and pepper. Pour the mixture over chicken and marinate overnight in the refrigerator.

On 6 metal skewers, thread lime, chicken, onion, mushrooms and tomatoes. Brush with marinade. Grill over mesquite and barbecue. Serves 6.
