LOBSTER VICTORIA 
1 (3 lb.) lobster
1 (8 oz.) can sliced mushrooms
2 tbsp. chopped onion
2 tbsp. chopped chives (fresh if possible)
2 tbsp. flour
1/2 stick butter
1/2 c. dry white wine
Lemon wedges

Boil lobster in water for 15 minutes. Split in half and take out meat. Clean shell and save. Cut lobster meat into 1 inch cubes. Add to onion which has been sauteed in butter with half the fresh chives and all the mushrooms, drained. Let cook for 3 to 5 minutes in pan on medium heat. Add flour and stir well.

Add wine and stir on medium heat for 2 minutes. Place in shell and bake at 350 degrees for 5 to 6 minutes. Just before serving, sprinkle remaining chives on top and serve with lemon wedges.
