3 lbs. small new red or white potatoes 3 tbsp. unsalted butter 3 tbsp. olive oil 2 to 3 lg. cloves garlic, peel and crush with a press or mince fine 1/2 c. chopped fresh parsley 1/2 tsp. dried thyme 2 tsp. dried rosemary 1/8 tsp. cayenne, 1/4 black pepper, 1/2 tsp. salt 1 to 2 tsp. paprika Preheat oven to 375 degrees. Scrub and dry potatoes. Cut in quarters. In large baking pan melt butter in oil over medium heat. Add garlic, parsley, thyme, rosemary, paprika and cayenne. Add potatoes and toss to coat well. Bake, basting occasionally for 40 minutes or until tender. Season with salt and pepper to serve (8 to 10). These will hold well in warm oven while you get the rest of the meal to the table. |
