PETE BABITAS' SALAD (BASQUE) 
1/2 head lettuce
2 carrots, chopped fine
1 stalk celery, chopped fine
1 can shrimp, drained
1/2 onion, chopped - may add more or less
1 cucumber, chopped
1/2 green pepper, chopped fine
Feta cheese or Cheddar cheese (julienne slices)
1/2 can ripe olives, pitted - for garnish

DRESSING:

Make vinegar and oil dressing using 1/2 pure olive oil and 1/2 regular oil. For seasoning in dressing, use seasoned salt and seasoned pepper. Mix together and garnish with olives. Chill an hour or so. The Basque came from a region in the Pyrenees Mountains on Spanish and French border.
