12 of the freshest eggs 2 1/2 c. powdered sugar 1 qt. finest brandy 1 pt. Jamaica rum (Dork) 1 gal. heavy cream Separate yolks from whites. Set whites aside. Beat yolks relentlessly and add 1 cup sugar, and incorporate alternate shots of brandy and rum. Let stand. (Cool.) Beat egg whites stiffer than stiff, adding the remaining sugar. Fold egg whites into mixture. Fold in 3/4 of the cream. Beat remaining cream until stiff and fold into mixture. Twelve hours rest in a cool place of safety will be beneficial. Partakers will need spoons as this calls for spade work. Serve with a sprinkle of grated nutmeg. |
