PIEROGI CASSEROLE 
10 to 12 lg. boiled and mashed potatoes
1 lb. grated Cheddar cheese
2 1/2 sticks butter
4 finely chopped onions
1 lb. cooked lasagna noodles

Mash potatoes and add cheese and beat with mixer. Saute onions in butter until tender. Add 1/3 of the onions and butter to potato mixture. Add salt and pepper to taste.

Grease a 9x13 inch pan or dish. Layer noodles in dish. Layer potato mixture and repeat until ending with noodles. Pour the remaining onion and butter mixture over casserole and cover with foil. Bake at 350 degrees for 30 minutes.
