PIEROGI CASSEROLE 
9 lasagna noodles
4 to 5 med. potatoes
1 to 2 c. shredded cheddar cheese
1/2 c. chopped onion
1/2 c. butter

Cook lasagna noodles for 15 minutes. Drain and rinse with cold water and drain again. Cook potatoes in salted water. Drain and mash. Add cheese to hot mashed potatoes and season to taste with salt and pepper.

Assemble by placing three lasagna noodle son bottom of greased 11 3/4 x 7 1/2 inch casserole. Add half of mashed potato mixture and top with another layer of lasagna. Repeat with remaining potato and noodles. Saute onion in butter until wilted and pour over casserole.

NOTE: Push edges of lasagna noodles into potatoes, around outside edge. Cover with aluminum foil and bake at 350 degrees for 20 minutes. Uncover and bake for 5 to 10 minutes to lightly brown onions.
