PIEROGI CASSEROLE 
9 lasagna noodles
4 to 5 med. potatoes
2 c. shredded Cheddar cheese
1/2 c. chopped onion
3/4 c. butter
Salt and pepper to taste

Cook lasagna noodles in 6 quarts of boiling water until just tender, about 15 minutes. Drain, rinse with cold water and drain again. Cook potatoes in salted water, drain and mash like for mash potatoes. Add cheese to hot potatoes and season to taste with salt and pepper.

To assemble: Place 3 lasagna noodles on bottom of a greased 11 3/4 x 7 1/2 inch casserole dish. Add half of mashed potato mixture on top. then add another layer of lasagna. Repeat with remaining potatoes and noodles. Saute onions in butter until wilted. Pour over casserole. Bake 20 to 30 minutes in a preheated oven at 350 degrees. Makes 6 to 8 servings.
