ZUCCHINI CASSEROLE 
6 c. zucchini
1/4 c. chopped onion
1/2 c. or 1 cube butter
1 (10 oz.) pkg. Stove Top stuffing
1 c. sour cream or IMO
1 c. shredded carrots
1 can creamed soup (celery, mushroom or chicken)
Hamburger or chicken (opt.)

Peel and cut zucchini in chunks. Brown or saute with carrots, onion, butter. Mix in sour cream and soup. Take 1/2 of the stuffing and put in bottom of pan. Put the soup mixture over the stuffing, then put the rest of the stuffing on top. Brown hamburger and if you use, add to the top of stuffing before putting soup mix on or mix into soup before adding. Bake for 20 minutes at 350 degrees. Bake in dipper pan.
