CRYSTAL GINGER SWEET POTATOES 
6 med. sweet potatoes, peeled
Lightly salted water
3 tbsp. lightly salted butter
1/4 c. crystallized ginger, cut in sm. pieces
1/4 c. brown sugar
1/2 c. orange juice

Cover sweet potatoes with lightly salted water. Cover pan; bring to a boil and cook about 20 minutes until tender.

Butter a 1a 1/2-quart casserole. Heat oven to 375 degrees. Slice potatoes 1/4-inch thick. Arrange a layer of potatoes in the casserole. Dot with 1 tablespoon butter, cut in pieces. Sprinkle with some ginger. Repeat to form 2 more layers. Sprinkle top with brown sugar and pour orange juice over it. Bake about 45 minutes. Makes 6-8 servings.
