CRUNCHY POTATO LATKES 
2 med. white potatoes
1 med. onion
2 eggs
2 tbsp. flour
1/2 c. oil for frying

Peel potatoes and cut into large pieces. Shred in a food processor. Remove and drain excess liquid.

Place steel blade in processor. Process onion to dice. Add shredded potatoes, salt, eggs and flour, and blend for a few seconds. Pour batter into a bowl.

Heat 2 tablespoons oil in pan. Spoon by tablespoonful into oil, and fry on one side until brown around the edges. Turn and fry on other side. Drain on paper towel.

Serve warm with sour cream, applesauce or sugar. Serves 3 to 4.
