AMISH CREAM PIE 
3/4 c. sugar
1/4 c. cornstarch
1/4 tsp. salt
2 1/2 c. half and half
1/2 c. butter
1/4 c. packed brown sugar
1 tsp. vanilla
1 baked 9-inch pie shell
ground cinnamon

In medium saucepan, stir together sugar, cornstarch and salt. Whisk in half and half and cook and stir over medium heat until thick and bubbly. Remove from heat. Stir in butter, brown sugar and vanilla until butter melts. Pour into baked pie shell and dust with cinnamon.

Bake pie in a 325°F oven for 30 minutes (the center of the pie won't be set). Cool the pie on a wire rack for 1 hour. Chill for 3 to 6 hours before serving. (Pie will set up upon chilling.)
