TWICE BAKED POTATOES I 
4 lg. potatoes, baked
1 1/2 c. shredded cheddar cheese (save 1/2 c. for topping)
1/4 c. Miracle Whip
1/4 c. milk
1 egg
1/2 - 1 tsp. salt
Dash of pepper
1/4 c. green onion, finely chopped (opt.)
10 slices of bacon (fried & crumbled, save some for topping)

Cutting lengthwise slice off top of each potato, scoop out potato leaving 1/8" shell. Combine potato, 1 cup of cheese, Miracle Whip, milk, egg, salt and pepper, green onion and bacon. Mash all together just slightly. Fill potato shells and top with remaining cheese and bacon. Bake at 350 degrees for an additional 20 minutes. If feeding more people of course this recipe can be doubled; etc.
