EGGLESS DROP COOKIES 
1/2 c. packed brown sugar
1/2 c. + 2 tbsp. oil
1/3 c. honey
1 c. whole wheat flour
1/2 c. unbleached flour
1/2 c. soy flour
1 c. raisins
1/2 c. chopped nuts
2 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. salt
1/4 tsp. nutmeg

Combine sugar, oil and honey in a mixing bowl. In a separate bowl mix together flours, raisins, nuts, baking powder, cinnamon, salt and nutmeg. Combine dry mixture with sugar mixture and mix well. Pinch off a tablespoon or so of the dough and flatten it with a fork on a greased baking sheet. Bake at 375 degrees for 8 to 10 minutes. Makes about 5 dozen cookies.
