ZUCCHINI DROP COOKIES 
1 c. grated zucchini, drained
1 tsp. baking soda
1 c. sugar
1/2 c. oil
1 egg, beaten
2 c. flour
1 tsp. cinnamon
1/2 tsp. cloves
1/2 tsp. salt
1 tsp. vanilla
1 c. coconut, nuts or 1 c. raisins or any combination of the 3 (optional)

Mix the first 5 ingredients, then add the next 5. Mix well. Stir in the optional ingredients. Drop by teaspoon onto a greased cookie sheet.

Bake at 375°F for 12 to 15 minutes.
