FLOUR TORTILLAS 
3 c. flour
1 tsp. baking powder
1/2 tsp. salt
1/4 c. shortening
3/4 c. (very warm) water

Combine flour, baking powder, salt. Add shortening. Cut shortening with your hands until it resembles corn meal. Add enough warm water and work it with your hands until it holds together and form a ball. Knead for about 5 minutes. Divide dough into 14 or 15 pieces. Shape each into a smooth ball; let rest for about 15 minutes.

Roll each ball with a rolling pin about 6-inches round, working from center to edges. Turn tortilla often, stretching dough as you carefully peel it off board. As you shape each tortilla, place in preheated heavy griddle or frying pan (ungreased) over medium heat. Cook for 30 seconds on each side. Turn about 3 times or about 1 1/2 minute. Use spatula to turn tortillas. If tortilla burns or scorches, reduce heat. Per tortilla: approximately 110 calories.
