TORTELLINI 
4 slices bacon, diced
2 scallions. sliced thin
2 tbsp. butter, cut up
1 c. heavy cream
1/2 c. Parmesan cheese
1/2 c. peeled, seeded, chopped tomato
1/4 tsp. white pepper
1/8 tsp. nutmeg
1/4 tsp. salt
1/4 lb. cheese filled tortellini

In a skillet, cook the bacon over moderate heat until it is crisp. Transfer to paper towels to drain. Retain 1 teaspoon fat in skillet. Cook scallions over medium heat for 1 minute and transfer to paper towels to drain. In large saucepan, cook butter, cream over moderate heat, stirring constantly for 3 minutes or until mixture is thickened. Stir in Parmesan cheese, bacon, scallions, tomatoes, pepper, nutmeg and salt. Simmer the mixture stirring for 1 minute. Add tortellini and heat. Toss the mixture. Serve with Parmesan cheese.
