VEGETABLE-TORTELLINI SOUP 
1 lg. onion
2 cloves garlic
1 tbsp. olive oil
3 (14 oz.) cans beef broth
1 (14 1/2 oz.) can stewed tomatoes
1/2 to 3/4 c. picante sauce
1 tsp. basil
1 (7 oz.) pkg. dried cheese or beef tortellini
1 green pepper
Parmesan cheese

Cook onion in oil until transparent. Add broth, tomatoes, picante sauce and basil; bring to boil. Stir in tortellini; simmer, uncovered, for 15 minutes. Stir in green pepper; simmer for 5 to 10 minutes. Stir in green pepper; simmer for 5 to 10 minutes. Then ready to serve. Sprinkle with Parmesan cheese.
