CHOCOLATE MOUSSE CHEESECAKE 
CRUST:

1 lb. Oreo cookies
2/3 stick butter (softened)

Crush cookies with filling. Mix with butter. Press into bottom and up sides of 9 or 10-inch springform pan. (Set pan on 12-inch square of foil and press up on sides to prevent grease from leaking in oven.) Chill while making filling.

FILLING:

3 (8 oz.) pkgs. cream cheese (room temperature)
1 c. sugar
4 eggs
2 tbsp. flour
10 oz. chocolate chips (melted)
1 1/4 c. sour cream
7 tbsp. cold coffee

Cream cheese and sugar; add eggs and flour, melted chips, sour cream and coffee. Put in chilled crust. Bake at 350 degrees for 45-50 minutes. Turn off oven; prop door open slightly and leave cake in for 1 hour.

Remove from oven and cool on rack. Refrigerate overnight. Garnish with white chocolate, cherries, or whip cream if desired. Do not overbake!
