1 tbsp. paprika 2 tbsp. salt 1 tsp. onion powder 1 1/2 tsp. garlic powder 1 tsp. cayenne pepper 1/2 tsp. white pepper 1/2 tsp. black pepper 1/2 tsp. thyme 1/2 tsp. oregano 1 tbsp. fresh parsley, chopped 2 tbsp. sweet creamy butter 2 tbsp. vegetable oil 1" thick bluefish, catfish or red snapper fillets Mix above dry ingredients in bowl. Dip 1" thick bluefish, catfish or red snapper fillets in melted sweet cream butter and oil and sprinkle with the spice mixture, then drop into VERY HOT cast iron skillet. Cooking time is only 3 to 4 minutes per side; thinner fillets require less time. (A tablespoon of butter may be added to the hot skillet just before the seasoned fish to prevent sticking.) |
