1 tsp. lemon pepper 1 tsp. paprika 1 tsp. black pepper 1 tsp. basil 1 tsp. sage 1 tsp. thyme 1 tsp. Rosemary 1 tsp. salt 2 bay leaves 1 tsp. garlic powder 1 lb. snapper or flounder 2 tbsp. olive oil SAUCE: 1/2 c. diced tomato 1/2 tsp. garlic 1/2 tsp. chopped thyme 2 tbsp. butter In a blender or food processor add the 10 spices and blend to a powder. Heat pan without oil. Add the tomato, garlic, thyme and heat. Add butter to make a thick coat. Dredge fish in the powder (cover both sides. Heat olive oil in pan and cook fish over medium high. Serve with sauce over fish. |
