10 oz. Swordfish, catfish, snapper or bluefish filets or similar Oregano 1 tsp. thyme 1 tsp. parsley 1 tsp. salt 1/2 tsp. black pepper 1/2 tsp. paprika 1/2 tsp. cayenne (red) pepper 4 cloves crushed garlic 1 stick butter, melted Combine dry ingredients, then add melted butter and whisk to combine. Coat each piece of fish completely. Heat a black iron frying pan to medium high for about 10 minutes. Lower heat to add fish (it will smoke some). Cover and raise temperature again. Cook 4 to 5 minutes on each side depending on fish thickness. |
