PUMPKIN CHEESECAKE 
1/4 c. graham crumbs
4 (8 oz.) pkg. cream cheese
1 1/2 c. sugar
1/4 c. flour
5 eggs
1/4 tsp. salt
1 (1 lb.) can pumpkin or fresh
2 tsp. pumpkin pie spice or cinnamon

Butter bottom and sides of springform pan. Sprinkle with crumbs and shake pan. Heat oven to 325 degrees. Beat cheese in large bowl until fluffy. Beat in sugar gradually. Add eggs 1 at a time, beating well. Add flour, salt, pumpkin and spice. Pour into pan. Bake 1 hour and 30 minutes until firm around the edges and soft in the center. Turn off heat. Open door of oven and let cool in oven first for 30 minutes.
