CHICKEN CACCIATORE 
4 chicken breasts (skin removed)
1/2 tsp. salt
1 clove garlic, minced
1 tsp. parsley
1 c. mashed tomatoes
1 tbsp. safflower oil
1/2 tsp. basil
1 c. peppers, chopped
1/2 c. mushrooms

Bake/broil chicken until tender. Simmer tomatoes and spices. Saute peppers and mushrooms in oil until tender, add to tomato sauce. Chunk chicken and add to sauce and simmer for 20 minutes.
