FROZEN RASPBERRY DESSERT 
Preparation: Easy. Cost: Fairly expensive. Preparation time: 30 minutes. 2 to 3 hours chilling time.

1 pt. fresh raspberries or 1 (12 oz.) pkg. frozen raspberries
1 tbsp. granulated sugar
2 tbsp. cherry liqueur or other liqueur
2 egg whites
1/2 c. whipping cream

Thaw frozen berries, if used. Rinse fresh berries carefully. Set aside some berries for garnish. In a mixer, combine berries with 1/2 tablespoon sugar and the liqueur.

Beat egg whites until stiff peaks form. Add remaining sugar and beat a few more seconds. Add raspberry mixture. Whip cream. Carefully fold into raspberry-egg mixture. Spoon mixture into chocolate cups or small individual serving bowls. Freeze for 2 to 3 hours. Good served with: Fresh raspberries, if available, whipped cream and sherry or other dessert wine, if desired.

Tips: For chocolate cups, melt chocolate over low heat in double boiler. Brush paper muffin cups with mixture. Freeze until firm. Repeat procedure 4 times until a thick layer forms. Remove paper cups.
