BANANA TEA BREAD 
1/2 c. chopped nuts
1 c. mashed bananas (2 lg.)
1 1/2 c. sifted flour
1 tsp. baking soda
1/2 tsp. salt
1/2 c. soft butter
1 c. sugar
2 eggs
1 tsp. vanilla or 1/2 tsp. lemon extract
1/2 c. thick sour cream or 1/4 c. buttermilk

Set oven at 350 degrees to preheat. Grease 3 empty #303 size cans or 9 x 5 x 3 inch loaf pan. Chop nuts. Mash banana. Sift together flour, soda and salt. Combine butter, sugar, egg and flavoring in mixing bowl. Cream for 1 1/2 minutes. Stop. Scrape bowl. Add banana, cream, nuts and the flour mixture. Beat about 1/2 minute until well blended.

Fill cans about 2/3 full. Bake 1 hour or until done. Loosen and remove from pans. Cool thoroughly before serving. Makes about 30 (1/8 inch) slices per can.
