MACAROONS 
2 eggs
3/4 c. sugar
1/3 c. white flour
1 tbsp. butter, melted
1 tsp. vanilla
2 2/3 c. coconut
1/4 tsp. baking powder
1/8 tsp. salt
3/4 c. mini chocolate chips (optional)

Beat eggs until foamy. Gradually add sugar beating constantly until light and thick in color, about 5 minutes. Fold in flour, salt, and baking powder. Then add butter, vanilla, and coconut. Add chips if desired. Drop from teaspoon onto greased and floured baking sheets. Bake at 325 degrees for 11-15 minutes until golden brown around edges. Do not over bake. Let stand a few second. Remove. Makes about 3 dozen.
