BREAKFAST CASSEROLE 
1 1/2 lb. sausage
1 med. onion
1 green pepper
1/2 lb. Velveeta, cubed
Salt and pepper to taste
6 eggs
5 slices bread, cubed (muffin bread works best)
1/2 c. milk

Brown sausage, onion and green pepper. Add cheese to hot meat mixture. Stir until cheese melts.

In separate bowl, beat eggs, add milk and bread cubes and mix. Combine meat and bread mixture together and place in oblong baking dish. Cover with foil and refrigerate a minimum of 3 hours or overnight. Bake covered with foil approximately 1 hour at 350 degrees.

Serves 12.
