MOCK ANGEL FOOD CAKE 
1 c. sugar
1 1/3 c. cake flour
3 tsp. baking powder
1/3 tsp. salt
2/3 c. milk, scalded
1 tsp. vanilla extract
1/2 tsp. almond extract
2 egg whites, stiffly beaten

Preheat oven to 350 degrees. Use a 7" tube pan, ungreased.

Sift sugar, cake flour, baking powder and salt together 3 times. Place in large bowl. Slowly add scalded milk, beating into flour mixture. Add extracts. Fold stiffly beaten whites into batter, mixing until well blended.

Bake at 350 degrees in tube pan for 35 to 45 minutes. Cake should spring back when lightly touched. Invert pan on cooling rack. When cold, frost with powdered sugar glaze. Best when served the next day.
