TWO EGG ANGEL CAKE 
2 egg whites
1 c. sugar
1 c. all purpose flour
1 tbsp. baking powder
Pinch of salt
1 c. milk

Preheat oven to 350 degrees. Beat egg whites until very stiff. Sift together sugar, flour, baking powder and salt 3 times. Scald milk; add hot milk to dry ingredients, beating well. Fold in egg whites. Spread batter in ungreased 9" angel food cake pan and bake until done, about 30 minutes. Cool about 15 minutes in pan, then remove.
