PEANUT BUTTER BISCUITS
2 c. flour
1 tbsp. sugar
3 tsp. baking powder
1/4 c. peanut butter
2 tbsp. shortening
3/4 c. milk

Preheat oven to 425 degrees. Lightly grease a baking sheet without sides.

Combine the flour, sugar and baking powder in a large mixing bowl. Whisk to blend thoroughly. Add the peanut butter and shortening and cut in with a knife, or pastry blender, until mixture is crumbly. Make a well in dry ingredients; pour in the milk and toss with a fork until dough holds together.

Gather the dough in a ball and roll it around the inside of the bowl to pick up any stray particles. Transfer to a lightly floured surface and knead 20 to 25 times, sifting on flour if necessary to prevent sticking. Pat into a circle, then roll to 3/4 inch thickness. Cut out with a 2-inch biscuit cutter and place on prepared baking sheet.

Bake 12 to 15 minutes or until nicely browned.
