MEXICAN MINI PIZZAS | |
1/2 lb. ground beef 2 tbsp. taco seasoning mix 3/4 c. (3 oz.) shredded Monterey Jack cheese 3/4 c. (3 oz.) shredded Cheddar cheese Crumble ground beef into 2-cup microwave baking dish. Microwave on high, uncovered, 2 to 3 minutes or until no longer pink, stirring once. Drain; break meat into pieces; stir in taco seasoning mix. Arrange 3 corn tortillas on large microproof platter. Divide half of meat filling evenly among tortillas. Combine cheeses and sprinkle 1/4 cup over each tortilla. Microwave on high, uncovered, 1 1/2 to 2 minutes or until cheese melts, rotating plate once. Repeat with remaining tortillas, taco filling and cheese. Cut each tortilla into 8 wedges. Serve hot. Makes about 48 appetizers. |
