MOLASSES CAKE 
2 1/2 c. whole wheat flour
1 1/2 tsp. baking soda
1/2 c. melted butter
1/2 c. med. unsulfured molasses
1/2 c. hot water
1/4 c. blackstrap molasses

Combine the flour and baking soda in a large bowl. Stir in the butter and molasses. Remove 1 cup of this mixture and set aside.

In a small bowl combine the hot water and blackstrap molasses. Add to the flour mixture in a large bowl, and stir until thoroughly combined.

Place batter in lightly oiled 8 inch round cake pan. Sprinkle the remaining cup of flour mixture over top of the batter.

Bake in preheated 375 degree F. oven for 30 minutes, until done.
