SWEET & SOUR CHICKEN 
2 1/2 lbs. boneless chicken breasts
1 lg. can chunky pineapple in heavy syrup
1 lg. can baby carrots
1 qt. duck sauce
2 eggs
Unflavored bread crumbs
White rice

Cut chicken into bite-size pieces. Dip in egg and unflavored bread crumbs. Saute lightly until light brown color. Drain on paper towels. (May be prepared ahead and freeze it.)

A few hours before serving, take chicken, pineapple (drain off syrup and save) and carrots, mix together. Mix heavy syrup and a little more then 1/2 bottle of duck sauce together. Pour over chicken mixture, marinate a few hours. Bake 1/2 hour and serve over white rice. Great dish for parties.
