CHOCOLATE FUDGE SAUCE 
1 1/2 c. sugar
3/4 c. unsalted butter
5 oz. unsweetened chocolate
1 c. unsweetened cocoa powder
1 tsp. vanilla
1 c. heavy cream

1. Combine sugar, butter, chocolate, cocoa and vanilla in the top of a double boiler over moderate heat, stirring occasionally until blended to a grainy liquid.

2. Add the cream and stir constantly for 10 minutes. Can be served at this point, or left over low heat heat, stirring occasionally. It will also keep in the refrigerator for up to 3 to 4 weeks and will heat very well if done slowly.
