POTATO-SPINACH CASSEROLE | |
6 to 8 lg. potatoes, peeled, cooked and mashed 1 c. (8 oz.) sour cream 2 tsp. salt 1/4 tsp. pepper 2 tbsp. chopped chives or green onion tops 1/4 c. butter 1 (10 oz.) pkg. frozen chopped spinach, thawed and well drained 1 c. (4 oz.) shredded Cheddar cheese In a large bowl, combine all ingredients except cheese. Spoon into a greased 2 quart casserole. Bake, uncovered, at 400 degrees for 15 minutes. Top with cheese and bake 5 minutes longer. Yield: 6-8 servings. |
