SPINACH AND PEANUTS | |
2 tbsp. raw peanuts 2 tbsp. salad oil 1/4 c. smoked ham, chopped 2 tbsp. vinegar 1/4 tsp. powdered mustard 1/2 tsp. salt 1 lb. fresh spinach 6 c. boiling water Boil the water. Chop the ham and place in small bowl. Add vinegar, mustard and salt. Wash and stem the spinach; place in a large bowl and pour the boiling water over it. Let stand 2 to 3 minutes. Meanwhile, heat oil and lightly toast peanuts. Pour peanuts and oil over ham and seasonings in the small bowl. Drain, chop and redrain the spinach. Place in serving bowl. Add ham/peanut/oil mixture to spinach and toss to mix. |
