MAPLE-BRAN MUFFINS | |
3/4 c. maple syrup 2 eggs 2 1/2 c. bran flakes, crushed (measure before crushing) 1 c. sour cream 1 c. flour 1/2 c. chopped walnuts 1 tsp. baking soda Optional topping: 1 tbsp. grated orange rind combined with 1/4 c. sugar Preheat oven to 400 degrees. Thirty minutes before serving: grease muffin tins. Beat syrup and eggs with a wire whisk. Stir in the flakes and let sit for 5 minutes. Beat in sour cream with wooden spoon. Stir in remaining ingredients until flour is moistened (batter will be lumpy.) Spoon into muffin pan. Bake 20 minutes or until toothpick comes out cleanly. Immediately remove from pan. Sprinkle muffins with 1 tablespoon grated orange rind and 1/4 cup sugar before baking if desired. |
