OATMEAL MAPLE PECAN MUFFINS 
2 c. ground up oatmeal
1/4 c. whole wheat flour (sifted)
2 tsp. baking powder
1/8 tsp. salt
1/2 c. chopped pecans
1/2 c. chopped dates
1/2 c. pure maple syrup
3/4 c. water
2 eggs
2 tsp. natural maple flavoring
2 tbsp. safflower oil

Mix dry ingredients first. Add the remaining ingredients and finish mixing. Pour into paper lined or lightly oiled muffin tins. Bake at 375 degrees for 20 minutes. Makes 12 muffins.

Time Saver: Mix and chop up the dates with the oatmeal together in the blender. DO IT IN SMALL BATCHES so as not to burn up your blender's motor.
