BEEF WITH GREEN PEPPERS | |
1 lb. flank steak or boneless beef 2 med. size onions 2 tbsp. soy sauce 2 tsp. dry sherry 4 tbsp. vegetable oil 3 sm. green peppers, seeded 2 tsp. cornstarch 1 tsp. sugar 1 tsp. salt Slice beef into thin strips. Cut peppers into strips and peeled onions into thin wedges. Mix beef, soy, cornstarch, sherry and sugar. Heat wok or skillet over high heat. Add half of oil, salt and vegetables. Stir fry until tender, but crisp. Remove to bowl. Add remaining oil. Add beef. Cook 1 minute stirring once. Return vegetables. Stir fry until beef is medium. Spoon into serving dish. Make 4 to 6 servings. |
