MEXICAN CORNBREAD 
2 c. meal
1 can cream style corn
Chopped bell pepper
1 med. size onion, chopped
1/2 c. bacon grease
1/2 c. grated cheese
1 c. sweet milk
2 eggs
1 tbsp. salt
1/2 tsp. baking soda

Use above ingredients for cornbread mixture.

MEAT MIXTURE:

1 1/2 lbs. hamburger
6 or 8 jalapeno peppers, chopped
1 med. onion, chopped
2 tbsp. bacon grease
Salt & pepper to taste

Sear onions and peppers in bacon grease, add hamburger meat and cook until light brown and crumbles into small pieces, salt and pepper to taste. Drain some if it is real greasy.

Mix all ingredients of cornbread mixture and place about half of it in an ungreased pan about 9"x13". Smooth out mixture evenly then layer the meat mixture over that. Sprinkle the extra cup of grated cheese over meat layer. Pour the rest of the cornbread on top and smooth to cover all the meat and cheese. Bake at 475 degrees until golden brown all over.
