PINEAPPLE UPSIDE DOWN CAKE 
2 tbsp. butter
1/2 c. brown sugar
1 (14 1/2 oz.) can sliced pineapple rings
4 maraschino cherries
1/2 c. shortening
1/2 c. ground sugar
1 1/4 c. sifted all-purpose flour
2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. grated lemon peel
1 egg

Melt butter in an 8"x8"x2" pan. Stir in brown sugar. Drain pineapple, reserving 1/2 cup syrup. Place sugar mixture in pan. Arrange pineapple pieces and cherries on top of mixture.

Place shortening in mixing bowl. Add sifted dry ingredients. Add remaining ingredients and reserved pineapple syrup. Mix until flour is moistened. Beat hard 2 minutes. Pour over pineapple. Bake at 350 degrees for 30 to 35 minutes or until done. Cool 10 minutes, invert on plate and serve warm.
