OVEN FRIED SNAPPER 
1/4 c. vegetable oil
1 tsp. sea salt
2 cloves garlic, crushed
1/2 c. Italian-seasoned bread crumbs
1/2 c. grated Parmesan cheese
2 lbs. snapper fillets

Combine oil, salt, and garlic in a large dish; set aside. Combine bread crumbs and cheese. Dredge each side of fillet in oil mixture, and then in bread crumb mixture. Place fillets in a lightly greased 15 x 10 x 1-inch baking pan. Bake at 500 degrees for 12 to 15 minutes or until fish flakes easily when tested with a fork. Yield: 6 servings. Note: Sea salt is available in the spice section of most supermarkets.
