RICE BROCCOLI CASSEROLE 
1 c. chopped onion
2 tbsp. oil
3 c. cooked rice
1 lb. Velveeta cheese, cubed
2 (10 oz.) pkg. cut frozen broccoli, thawed
1/4 c. milk
1 can cream of chicken or mushroom soup
1 tsp. salt

Saute onion in oil. Add remaining ingredients and pour into 3-quart casserole. Bake at 350 degrees for 30 minutes. Serves 6-8 people. Good side dish!

OPTIONS: Add milk to soup. Add chicken bouillon cubes when cooking rice. Add chicken or tuna to make this a main dish.
