RICE BROCCOLI CASSEROLE 
1 tsp. salt
1 c. chopped onion
2 tbsp. oil
3 c. cooked rice
1 lb. Velveeta cheese, cubed
2 pkgs. (10 oz. each) broccoli
1/4 c. milk
1 can cream of mushroom soup

Saute onion in oil. Add remaining ingredients and pour into a 3 quart casserole dish. Bake at 350 degrees for 30 minutes.
