ALBONDIGAS SUP 
3 qts. chicken broth
1 stalk celery, chopped
5-6 carrots, sliced or chopped
2 cans crushed tomatoes
Garlic powder

Prepare above ingredients and start to cook on stove. In meantime peel and dice 6 medium-large potatoes and set aside.

Take: 2 eggs 2 bunches green onions, chopped 1 lg. bunch cilantro, chopped Salt and pepper to taste 1 - 1 1/2 c. rice

Mix together and form into meatballs about 1 inch in diameter. Add potatoes to broth and bring to a boil. As it boils, slowly drop in meatballs. Simmer until meatballs are done. May add salsa to soup when eating for added zip.
