ZUCCHINI BREAD 
3 eggs
2 c. sugar
1 c. Crisco oil
1 tsp. vanilla
1 tsp. cinnamon
2 c. flour
1 tsp. baking powder
1 tsp. salt
1 tsp. baking soda
1 c. raisins
1 c. nuts
2 c. grated, peeled zucchini

Beat sugar into beaten eggs. Add oil. Combine dry ingredients and add alternately with zucchini to sugar and oil mixture. Stir in raisins, nuts and vanilla. Bake at 350 degrees for 55 minutes in greased and floured pans. If desired, let stand 10 minutes and then sprinkle with confectioners' sugar.
